Abstract

This article discusses Colombian gastronomy as something that goes beyond the simple dishes we consume; it is presented as a deep expression of the country's culture, identity, and diversity. Through it, our roots, customs, and traditions are conveyed. It also analyzes the importance of gastronomy within Colombian culture, as it helps preserve a sense of belonging and reminds us of where we come from. However, it points out that many Colombians today have stopped valuing their own cuisine, prioritizing foreign cultures instead. Before admiring what is foreign, it is essential to recognize and appreciate zgastronomic diversity, highlighting traditional dishes from each region with the goal of raising awareness about the delights Colombia has to offer. Lastly, it examines the role of gastronomy in tourism, emphasizing how it can become a tool to strengthen national identity and promote the country as an attractive international destination.
