Bibliometric analysis: exploring key sustainability trends in the food industry

Abstract

Sustainability is emerging as one of the pillars for the management of social, economic, and environmental resources in recent times. In this regard, the food industry is not exempt from the search for alternatives that enable the full establishment of sustainable relationships and practices, as well as the identification of future research trends for the utilization of available resources and the implementation of innovative processes. However, to gain a deeper understanding from the oldest foundations to the most recent dynamics, a rigorous evaluation of the published documents on this topic is required. For this reason, a bibliometric analysis is proposed that covers the scientific-academic production contained in the Scopus database on sustainability in the food industry during the period 2000-2024, with the aim of establishing the current circumstances in aspects such as authors, countries, and the most important documents, and their interaction with variables such as keywords, citations, and collaborative networks.
